wasabi foam soup
with the RYU Wasabi paste
Ingredients
- 60 g butter
- 60 g flour
- 850 g vegetable stock
- 250 g cream
- 1 onion
- 100 ml sake or white wine
- Zest and juice of one lemon
- 60 g RYU Wasabi paste
- A pinch of salt
Instructions
- Peel and finely dice the onions and sauté in a pan with butter. Then add the flour and sauté for a short time.
- As soon as the flour is lightly golden brown, add the vegetable stock, cream and wine and bring to the boil, while stirring gently.
- Flavour the soup with salt, lemon zest and lemon juice and blend thoroughly with a hand blender.
- Just before serving, add the RYU Wasabi paste and blend again until it is nice and foamy.
