wasabi foam soup

with the RYU Wasabi paste

  • 60 g butter
  • 60 g flour
  • 850 g vegetable stock
  • 250 g cream
  • 1 onion
  • 100 ml sake or white wine
  • Zest and juice of one lemon
  • 60 g RYU Wasabi paste
  • A pinch of salt
  1. Peel and finely dice the onions and sauté in a pan with butter. Then add the flour and sauté for a short time.
  2. As soon as the flour is lightly golden brown, add the vegetable stock, cream and wine and bring to the boil, while stirring gently.
  3. Flavour the soup with salt, lemon zest and lemon juice and blend thoroughly with a hand blender.
  4. Just before serving, add the RYU Wasabi paste and blend again until it is nice and foamy.
